Bruschetta with grilled eggplant

Directions

1. Halve the cherry tomatoes

2. Drain the eggplant and roughly chop, reserving the oil.

3. In a bowl, combine ingredients. Salt and pepper to taste and add reserved oil to reach desired consistency.

4. Serve atop crostini or fresh bread.
