Pork Burger with Grilled Vegetable Salsa and Piri-piri Chili Peppers

Directions

1. Mix the ground pork, parsley, mustard and lemon zest. Season to taste.

2. Form four meatballs and flatten to make four burger patties about 1 cm think.

3. Cook the patties on the barbeque or in a frying pan on medium heat for about five minutes on each side or until the meat is cooked through.

4. In a bowl, mix the grilled vegetables with two to three chopped piri-piri peppers, coriander and green onion.

5. Sprinkle lemon juice over the mix and set aside.

6. In another bowl, mix the mayonnaise with the two remaining piri-piri peppers. Set aside.

7. Grill the rolls and spread with the piri-piri mayonnaise. Add a pork patty and garnish with the vegetable salsa and chopped piri-piri peppers.

8. Serve immediately with a side salad.

Note Try a few leaves of roquette or bean sprouts as a garnish on the burger. Pork can be substituted with ground veal or turkey.
