Avocado deviled eggs with fried capers

Directions

1. Place the eggs in a saucepan and cover with cold water. Bring to a boil, cover and cook for 10 minutes. Drain, then cool immediately under very cold water 1 minute.

2. Roll out the eggs. Cut the eggs in half lengthwise. Remove the yellow, taking care not to break the white.

3. In the food processor container, place the egg yolks, avocado flesh, mayonnaise, lime juice, mustard and garlic. Salt and pepper. Mix 1 minute until a smooth texture is obtained.

4. Fill a pastry bag with a fluted socket of the avocado mixture. Fill the egg whites with the mixture.

5. Drain the capers and dry on paper towels.

6. In a small saucepan, heat the oil until it reaches a temperature of 325 ° F (163 ° C) on a cooking thermometer. Fry the capers for 15 to 30 seconds. Dry on absorbent paper.

7. Garnish eggs stuffed with chives and fried capers.
