Mango-Lime Grilled Chicken

Directions

  1. Mix the marinade ingredients in a bowl.
  2. Add the chicken breasts, the juice from one can of mangos and the pieces of mango to the bowl. Cover and let marinate in a cool place for 30 minutes to 2 hours.
  3. When you are ready to cook, preheat the grill to medium-high heat.
  4. Drain the chicken breasts and pieces of mango. Discard the marinade.
  5. Place the chicken breasts on the hot, oiled grill. Close the lid and cook for 15 to 18 minutes, turning the breasts occasionally, until the meat is no longer pink in the centre. Cook the pieces of mango for 3 to 4 minutes, turning occasionally.
