Cauliflower, artichoke and feta tabbouleh

Directions

1. Place cauliflower florets in food processor. Pulse a few times until you have a grainy texture.

2. Cut artichoke bottoms into quarters.

3. In a salad bowl, mix the tabbouleh with the chopped cauliflower, artichoke quarters, almonds, feta, oil and, if desired, lemon juice.
