Grilled Salmon with Avocado Chimichurri

Directions

  1. Season salmon with olive oil, salt, and pepper.
  2. Grill or pan-sear over medium-high heat for about 3–4 minutes per side, until cooked through.
  3. In a small bowl, combine the chimichurri, diced avocado, red onion, and lemon juice.
  4. Spoon the avocado chimichurri over the grilled salmon and garnish with lemon wedges before serving.
