Orzo & Grilled Vegetable Stuffed Mushroom Caps

Directions

  1. Prepare the orzo following package instructions.
  2. Reserve 2 tbsp of the liquid from the Grilled Mixed Vegetables, and chop up the vegetables. Set aside.
  3. Grill portobello mushroom caps over medium-high heat for 5 to 7 minutes, seasoning with salt and pepper. Set aside.
  4. In a large bowl, combine cooked orzo, grilled vegetables, lemon juice, fresh parsley and reserved liquid and chopped vegetables.
  5. Stuff the portobello mushrooms with the orzo mixture and top with goat cheese. Place on the grill or in a preheated oven, until warmed through.
  6. Before serving, add a drizzle of spicy oil or balsamic reduction.
