Directions
- Prepare the orzo following package instructions.
- Reserve 2 tbsp of the liquid from the Grilled Mixed Vegetables, and chop up the vegetables. Set aside.
- Grill portobello mushroom caps over medium-high heat for 5 to 7 minutes, seasoning with salt and pepper. Set aside.
- In a large bowl, combine cooked orzo, grilled vegetables, lemon juice, fresh parsley and reserved liquid and chopped vegetables.
- Stuff the portobello mushrooms with the orzo mixture and top with goat cheese. Place on the grill or in a preheated oven, until warmed through.
- Before serving, add a drizzle of spicy oil or balsamic reduction.
